About Umami Bioworks:

At Umami Bioworks, we're pioneering a future where seafood is cultivated, not caught. We’re developing sustainable, nutritious, and affordable cultivated fish, starting with species that are threatened and on the brink of extinction. Our mission is to feed humanity with the next generation of sustainable seafood, free from pollutants like mercury, antibiotics, and microplastics. We believe the future of food is one where we eat sustainably without compromise. Join us to be part of an innovative biotech startup making a real difference in the world’s food future.

Role Overview:

We’re seeking an inquisitive and innovative Scientist - Bioprocess Development to join our R&D team. You will work on developing and optimizing cell lines derived from fish and crustacean species for cultivated seafood production. Your work will involve primary cell isolation, culture adaptation, and differentiation into muscle and fat cells.

Key Responsibilities:

  • Develop and optimize upstream bioprocess conditions for suspension culture, including shake flasks and bioreactors.
  • Execute independent experiments to support bioprocess optimization for efficient cell cultivation.
  • Operate and maintain bioreactor systems to ensure optimal cell growth and productivity.
  • Perform experimental screening of bioprocess approaches to establish cost-effective, scalable processes for seafood production.
  • Use small-scale and scale-down modelling techniques to predict and optimize bioprocess performance during scale-up.
  • Prepare and maintain cell cultures and media in a sterile environment, following SOPs.
  • Monitor and maintain bioreactor equipment to ensure process conditions are within optimal ranges.
  • Record and analyze data on cell culture processes (e.g., cell density, viability, temperature, pH).

Core Competencies & Skills:

  • Strong experience in animal cell culture techniques, including primary cell culture, stem cells, and suspension culture.
  • Experience in fish or crustacean cell line development is highly preferred.
  • Familiarity with microscopy, flow cytometry, molecular biology techniques, and cell-based assays.
  • Knowledge of bioreactors, scalable cell culture processes, and serum-free media development is a plus.
  • Strong analytical skills, problem-solving abilities, and attention to detail.
  • Ability to work independently and collaboratively in a fast-paced research environment.

Qualifications & Experience:

  • Master’s degree in Biology, Life Sciences, or a related field with 2+ years of relevant industrial experience.
  • Bachelor’s degree in Biology, Life Sciences, or a related field with 5+ years of relevant industry experience.
  • Experience in biotechnology, bioprocess development, or cultivated seafood research is advantageous.

Why Join Umami Bioworks?

  • Be part of an innovative startup on the cutting edge of sustainable food production.
  • Autonomy to test new ideas and make a tangible impact on global food systems.
  • Work with passionate, world-class scientists and engineers in a collaborative environment.
